
INGREDIENTS
300 g clams
10 g garlic, peeled
10 g ginger, peeled
10 g oil

1 tbsp fermented black beans
1/2 tbsp bean paste
2 red chili, chopped
SEASONING
5 g light soy sauce
5 g oyster sauce
10 g shao xing wine
1/2 tsp white pepper
1 tsp sugar
½ tsp sesame oil
GARNISHING
2 stalks spring onion, chopped
METHOD
1. Soak clams in water for 15 min. Wash thoroughly to remove sand and drain.
2. Place garlic, ginger to chop 1 sec Turbo.
3. Add oil and sauté 3 min 120°C Speed 1.
4. Add ingredients A and cook 2 min 100°C Speed 1.
5. Add clams, seasoning and cook 4 min 120°C Reverse Speed Slow Stir
6. Garnish with spring onion before serving.
