INGREDIENTS

450 g chicken drumsticks (approx. 4 pieces chicken drumsticks), chopped into pieces (4-5 cm)
150 g coconut milk (eg. Kara®)
6 pieces kaffir lime leaves
1/2 piece lime juice
40 g cooking oil
Salt & sugar to taste

Curry Paste

8 pieces fresh red chillies, deseeded
12 pieces dried chillies, soaked until soft and deseeded
100 g shallots (approx.. 12 pieces shallots), peeled
2 garlic cloves, peeled
100g red onion (approx. 1 piece red onion), cut into half
2 pieces candlenut (buah keras)
5 g fresh turmeric root, peeled (kunyit)
5 g dried shrimp paste (belachan)
20 g water

METHOD

1. Place curry paste ingredients into mixing bowl to blend 20 sec Speed 10. Scrape down the sides of the mixing bowl.

2. Add oil and sauté till fragrant 10 min 120°C Speed 2.

3. Add chicken, coconut milk, salt and sugar, cook 12 min 120°C Reverse Speed Slow Stir.

4. Add kaffir lime leaves and lime juice and cook 2 min 120°C Reverse Speed Slow Stir.
